Rescue sprouting spuds & bendy carrots into golden, guilt-free crunch!
Ingredients
3 cups mixed root veggies (potatoes, carrots, parsnips, sweet potato)
1 tbsp olive oil or melted coconut oil
1 tsp smoked paprika
½ tsp garlic powder
1 tbsp fresh rosemary (or 1 tsp dried)
Sea salt to taste
Root Veggie Base:
Directions
RESCUE: Scrub veggies (no peeling needed!). Cut into even fry shapes.
SOAK (for extra crisp): Cover fries in cold water + 1 tsp salt. Soak 15 mins. Drain + pat DRY.
SEASON: Toss fries with oil, paprika, garlic powder, and rosemary.
ROAST: Spread on a parchment-lined tray.
Bake at 220°C (425°F) for 20-25 mins → flip halfway! Finish under grill for 2 mins if needed.
SERVE: Sprinkle it with sea salt.
