Ingredients
2 2/3 cups cake flour
Tip: No cake flour? Take 2 tablespoons of standard flour out and replace with 2 tablespoons of cornstarch.
1 Tbsp baking powder
1 tsp baking soda
1 tsp kosher salt
2 cups white sugar
115 grams butter
4 eggs
2/3 cup Greek yogurt
½ cup flavourless vegetable oil (canola, grapeseed…)
2 Tbsp vanilla essence
1 1/3 cups milk
4-6 earl grey tea bags
115g of softened butter
2 cups icing sugar
½ tsp vanilla essence
1-2 Tbsp milk

Preheat the oven to 180 degrees
In the bowl of a mixer, combine the flour, baking soda, baking powder, salt and sugar.
Beat the softened butter in until the mixture is in tiny crumbs.
At this stage, you want to begin on the milk. To make this cake earl grey flavoured, pour the milk into a small pot. Bring to a simmer then remove from heat and add desired amount of teabags. Let milk cool to room temperature, then squeeze out teabags before removing.
Some milk will evaporate so add more milk to measure to 1 ⅓ cups
In a small bowl, briefly whisk together oil, eggs, yogurt and vanilla. Pour this wet mixture into the dry, then beat until incorporated.
Add the milk and mix until smooth.
Pour the batter into prepared cake tin.
Bake for 30 minutes, or until cake is lightly browned and cooked inside (poke a skewer in to check, if skewer is clean the cake is cooked). All ovens are different so time may vary.
Make sure to cool cake completely before adding icing.
Icing directions
Either use the icing recipe provided, or your favourite buttercream recipe.
Cream butter and half of icing sugar (sifted!) in the bowl of a mixer.
Add vanilla and milk. Beat until smooth then add the rest of the icing sugar.
Now add some honey and caramel if you would like flavouring. It’s up to personal preference, so add a small dollop of honey and drop of caramel at first, then give the mixer a spin and try icing. Add more until you are happy with flavouring.
Ice the cooled cake, and enjoy!
