Easy healthy salmon and broccoli dish
Ingredients
4 salmon fillets
2 Tbsp olive oil
1 small onion
2 cloves of garlic
1 Tbsp of ginger
1 Tbsp red curry paste
1 can coconut cream
1 Tbsp fish sauce
1 Tbsp lime juice
2 cups broccoli
salt and pepper to taste
fresh coriander or parsley for garnish
Directions
Heat olive oil in a pan over medium heat, season salmon with salt and pepper, and sear until golden on both sides. Remove and set aside
In the same pan, sauté onion, garlic and ginger until fragrant. Add red curry paste and stir
Pour in coconut milk, fish sauce and lime juice. Simmer for 5 minutes
Add broccoli and cook until tender. Return salmon to the pan, spoon sauce over and heat through.
Top with garnish
