The 10-Minute, No-Fuss Avocado & Chickpea Smash Toast

No fancy ingredients. No weird techniques. Just honest, delicious food that feels good. This isn't just avocado toast. This is The Upgrade. Creamy avocado meets hearty chickpeas with a kick of lemon and chilli. It's protein-packed, fibre-filled, and the fastest route to a proper lunch. Let’s make the simple things special.

Ingredients
1 ripe avocado
1/3 cup (approx. 60g) tinned chickpeas, drained and rinsed
1/2 small lemon, juiced
1 tbsp finely chopped red onion or spring onion
Salt and pepper to taste
A pinch of chilli flakes (optional but recommended!)
1-2 slices of your favourite bread (sourdough, rye, wholemeal—all perfect)
Extra virgin olive oil, for drizzling
A few fresh coriander or parsley leaves (if you have them)
Directions
Toast Your Base: Pop your bread in the toaster until it’s as golden and crisp as you like.
The 60-Second Smash: While it toasts, scoop the avocado flesh into a bowl. Add the chickpeas. Use a fork to smash it all together. You want a rough, chunky texture—some whole chickpeas for bites of joy!
Season & Zing: Stir in the lemon juice, chopped onion, a good pinch of salt, a crack of black pepper, and chilli flakes if using. Mix well.
Pile & Drizzle: Spread the smash generously onto your warm toast. Drizzle with a little olive oil, scatter with herbs if you like, and add one more tiny pinch of chilli or pepper on top for looks.
