A dump-and-simmer soup with zero chopping. Packed with plant protein, fibre, and flavour. Your new favourite lazy dinner.
Ingredients
1 can (400g) crushed tomatoes
1 can (400g) brown or green lentils, drained and rinsed
2 cups vegetable stock (from a carton or powder)
1 tsp dried oregano or mixed herbs
1/2 tsp garlic powder (not fresh—no chopping, remember?)
Salt and pepper to taste
Optional: a drizzle of olive oil or splash of cream to serve
Directions
Open the cans. That's your prep.
In a medium pot, combine crushed tomatoes, drained lentils, vegetable stock, dried herbs, and garlic powder.
Bring to a simmer over medium heat. Stir once.
Reduce heat to low. Cover and simmer for 15-20 minutes.
Taste. Add salt and pepper as needed.
Ladle into bowls. Drizzle with olive oil or a swirl of cream if you're feeling fancy.
Eat with toast, crackers, or straight from the bowl like the tired hero you are.
