Ingredients
4 eggs
2 medium tomatoes, chopped
1 tbsp soy sauce
1 tbsp oil
Cooked rice to serve
Directions
Crack eggs into a bowl. Lightly beat with a fork.
Heat oil in a pan over medium heat.
Pour in eggs. Scramble gently for 1 minute until soft (still slightly runny). Remove from pan.
In the same pan, add tomatoes and soy sauce. Cook for 2 minutes until tomatoes soften.
Return eggs to pan. Stir everything together for 30 seconds.
Serve over rice.
